Which champagne to choose

Imperial Ossetra, nutty and refined, can take a vintage brut or even a structured rosé that echoes its depth.

Beyond champagne

No champagne on hand? The same principles apply to other traditional-method sparkling wines like cava and crémant, which deliver similar crispness for less. And do not forget the other timeless caviar pairing: ice-cold vodka, served neat, which is clean and neutral enough to let the caviar lead. For an alcohol-free table, a dry sparkling water or a bone-dry cider keeps the palate-cleansing effect intact.

A few serving tips

Serve both cold, but do not over-chill the champagne or you will mute its aromas. Keep the caviar over ice and eat it simply, on its own or on a neutral vehicle, so the pairing stays the star.
