THE CAVIAR

Reserve Kaluga Caviar (Huso dauricus x Acipenser schrenckii) is our premium "River Beluga," a hybrid of Kaluga and Amur sturgeon. Sustainably raised in the fresh waters of the Amur River basin, this Reserve grade features large, firm pearls with a radiant amber-to-gold shimmer. It is celebrated for its rich, buttery mouthfeel and complex flavor, with notes of hazelnut and a clean, creamy finish that rivals the finest Caspian Beluga.

Tasting notes: Rich, buttery, and creamy with large firm pearls, hazelnut depth, and a long, clean finish.

Sourcing: Responsibly farm-raised in the Amur River basin. Like all caviar legally sold today, ours comes from regulated, CITES-compliant aquaculture rather than wild harvest.

How much do I need? Plan about 15–30g per person as an appetizer. A 30g tin suits 1–2 people; size up for gatherings.

Serving suggestions: Serve chilled over a bed of crushed ice. Use a mother-of-pearl or bone spoon to avoid metallic interference with the flavor.

Freshness & storage: Packed to order and handled with the utmost care. Keep sealed and refrigerated for 4–6 weeks. Once opened, enjoy within 48 hours for peak flavor.

Frequently asked questions

What is "River Beluga" caviar?
It is a hybrid of the Kaluga sturgeon and Amur sturgeon, prized for large, firm pearls and a buttery richness similar to traditional Beluga.

How is Reserve Kaluga different from Kaluga Grand Cru?
Reserve is our premium selection, graded for larger, firmer pearls and an especially rich finish.

Where does it come from?
Responsibly managed sturgeon aquaculture in the Amur River basin, under CITES regulations.

How should I store it?
Keep sealed and refrigerated; unopened it lasts 4–6 weeks. Once opened, enjoy within 48 hours.

Why a mother-of-pearl spoon?
Metal can oxidize the roe and add a metallic taste. Mother-of-pearl, bone, or glass keeps the flavor pure.

How is it shipped? +
We ship all orders overnight in a custom insulated cooler packed with gel ice to ensure your caviar arrives perfectly chilled.

Unopened, your tin will stay perfectly fresh in the coldest part of your refrigerator for up to 4 weeks. Once opened, we recommend enjoying it within 48 hours.
