Why Beluga Caviar Is Banned in the US

Beluga is the most famous caviar in the world, so a lot of people are surprised to learn you can't easily buy the wild Caspian version in the United States. Here's why, and what to reach for instead.

The short story

Wild Beluga sturgeon were pushed toward extinction by overfishing and habitat loss in the Caspian and Black Sea regions. To protect them, the US restricted imports of wild Beluga caviar in the mid-2000s. The ban exists to give the species a chance to recover, and it sits within the broader CITES framework that governs international trade in endangered species.

What that means for you

It doesn't mean you're stuck with lesser caviar. It means the market shifted toward sustainable, farmed sturgeon, which today produces exceptional caviar without harming wild populations. The best alternatives

If you're chasing that big-pearl, buttery Beluga experience, Kaluga is the closest thing. It comes from a Beluga relative, Huso dauricus, and offers large glossy pearls and a creamy profile, farmed sustainably. A word on labels

You will occasionally see "Beluga" used loosely on products that are not wild Caspian Beluga, including farmed hybrids. If a seller uses the name, ask for the species and the sourcing. Legitimate caviar trade follows CITES rules and sellers should be able to tell you exactly what you are buying.
