How to do it right

Chill the caviar. Spoon a small amount, about half a teaspoon, onto the back of your hand near the thumb. Eat it in one bite and let it roll on your tongue, pressing gently against the roof of your mouth rather than chewing, so the pearls pop slowly. Chase it with a sip of Champagne or chilled vodka if you like. That's it.
