The Best Caviar to Buy Online in 2026: An Honest Comparison

We sell caviar, so treat this page accordingly. What follows is our attempt to write the comparison we wanted when we started buying caviar ourselves, including the parts where our competitors are the better choice. Prices were checked in August 2026 and change often, so verify before you buy.
The short answer
There is no single best caviar company. There is a best one for your situation:
- Best for a first tin under $100: Cavière or Marky's.
- Best breadth of species: Petrossian.
- Best for legal Beluga in the US: Marky's. They are the only one.
- Best chef pedigree: Regiis Ova, founded by Thomas Keller.
- Best price transparency and small-order shipping: Cavière.
Price comparison, 30g of comparable caviar
The 30g tin is the standard unit for comparison. Grades vary between sellers, so this is a like-for-like on species, not on grade.

On comparable species at the 30g size, we are generally less expensive than Petrossian and Regiis Ova, and comparable to Marky's on hybrids. We are not the cheapest caviar on the internet and we do not try to be. There are $40 tins available online, and there is a reason for that.
Shipping is where the real cost hides
Caviar has to ship overnight on ice, and that cost is often larger than the price gap between brands. Read the shipping terms before comparing tin prices.
Cavière includes free insulated overnight shipping on orders of $89 or more. Under $89, shipping is a flat $35. We ship Monday through Thursday only, so nothing sits in a warehouse over a weekend, and we ship to the continental US only.
Marky's, by comparison, offers free shipping only on orders above $2,999, so a single small tin carries an overnight charge. Petrossian and Regiis Ova both have their own thresholds. If you are buying one 30g tin, the shipping policy can change the total by more than the caviar does.
Where our competitors are genuinely better
This is the section most brand comparison pages leave out.
Petrossian has been selling caviar since 1920 and offers roughly seven species, including Sevruga and Beluga hybrid, which we do not carry. If you want a specific species outside the common four, or you want a house with a century of provenance and physical boutiques, buy from Petrossian. We cannot match the range or the history.
Marky's is the only company in the United States legally selling Beluga caviar, sourced from Sturgeon Aquafarms in Florida. If Beluga specifically is what you want, we cannot sell it to you and neither can anyone else here. Their catalog is also far deeper than ours across roe, hybrids and grades.
Regiis Ova carries Thomas Keller's name and his sourcing standards. For a certain buyer, that association is the product, and it is a real credential rather than a marketing line.
Any of them beats us on one more thing: track record. They have been doing this for years or decades. We have not.
Where we think we are the better choice
Price transparency. Every species, pearl size, gram weight and price is on the product page. No quote requests, no member-only pricing, no calling for availability.
A real entry point. Smoked Trout Roe at $14 and true sturgeon caviar from $99 mean the first purchase is not a $250 decision. Most of the category starts higher.
Small-order shipping. Free overnight at $89 rather than at a threshold most one-tin buyers will never hit.
Packed to order. Tins are packed when you order, not pulled from stock, and we only ship Monday through Thursday.
Honest naming. Our trout roe is called trout roe, not "trout caviar." We explain the distinction in caviar vs roe.
What all reputable sellers have in common
Every seller listed here is farm-raised and CITES-compliant. Wild sturgeon caviar is not the premium option in 2026; it is mostly illegal. Any seller marketing "wild Caspian" caviar to US consumers deserves hard scrutiny. Our guide to caviar sustainability covers how the regulation works.
How to choose without overthinking it
Pick the species first, then compare price per gram at the size you actually want, then add shipping. That order matters, because species drives flavor far more than brand does. A Siberian from any reputable seller will taste more like a Siberian from another reputable seller than it will like an Ossetra from the same shop.
