Caviar pricing looks chaotic from the outside: $14 here, $500 there, and no one explains why. Here are real numbers and the honest logic behind them.
The short answer
In 2026, quality farmed sturgeon caviar in the U.S. typically runs $90 to $180 for a 30g tin, which serves one to two people as a proper tasting. Non-sturgeon roe, like trout or salmon roe, runs $10 to $40 for a comparable amount. Anything dramatically cheaper labeled as sturgeon caviar deserves scrutiny.
Why the range is so wide
Species and maturity. A Siberian sturgeon produces eggs in 5-7 years; Kaluga and Ossetra take longer, and every extra year of raising a fish costs the farm money. That is most of the price difference. Farming standards. Sustainable, CITES-compliant aquaculture with clean water and low stocking density costs more than industrial production, and you taste the difference. The middlemen. Brands that import through multiple distributors mark up at every step. Direct-to-consumer pricing removes those layers.

How to spend wisely
Under $20: start with smoked trout roe. It is not sturgeon caviar, but it delivers the pop, the brine and the occasion for the price of a sandwich. Watch for "caviar" with no species listed, sturgeon caviar priced like trout roe, no mention of cold-chain shipping, and tins with no harvest or packing dates. Cheap caviar that arrives warm is not a deal.
