What is Caviar?

Caviar is made from the eggs of sturgeon, lightly cured with salt using traditional malossol techniques to preserve their natural flavor. Celebrated for centuries as a symbol of luxury, it is typically served as a spread or topping, making it a popular choice for festive occasions or refined indulgence.

Traditionally, the name "caviar" applied exclusively to the roe of wild sturgeon species found in the Caspian and Black Seas namely Beluga, Ossetra, and Sevruga. Nowadays, caviar is also produced through aquaculture around the world, using a variety of sturgeon breeds such as Sterlet, Pacific, and Siberian sturgeon. In broader use, the term may also describe roe from other fish, including salmon and trout.

How long does Caviar stay fresh?

Caviar typically stays fresh in the refrigerator for about 3 to 4 weeks if unopened.

Once the container is opened, however, it's best to enjoy it within 1 to 3 days, as exposure to air causes it to oxidize and lose quality.

What does Caviar taste like?

Caviar has a unique and refined flavor that's often described as:

  • Briny and salty, but not overwhelmingly similar to the ocean.
  • Buttery or creamy, especially with higher-quality varieties like Beluga or Ossetra.
  • Nutty or earthy, depending on the type of sturgeon and its diet.
  • Umami-rich with a smooth, lingering finish.

The texture is just as important: the eggs should be firm and pop gently in the mouth, releasing their flavor.

Different types of caviar (like Sevruga, Osetra, or Siberian) each have their own subtle flavor profiles. Freshness, salt content (malossol vs. more heavily salted), and origin also affect the taste. High-end caviar is prized for being clean, balanced, and complex rather than overly salty or fishy.
